Dicocco spelt has never been genetically altered by modern agriculture and has a very high digestibility, low gluten content and a very soft gluten that, although very difficult to turn into pasta at very low temperatures, allows us to make a very delicate product with unique characteristics.

The wheat is ground by trusted mills that must never heat the wheat during grinding, in order to maintain the organoleptic properties of the semolina.

All Fabbri pasta is made and dried at temperatures strictly below 38° C : to guarantee an extraordinary ability to hold sauces.
