Due to a temporary difficulty in sourcing Tuscan wheat that meets our quality standards, part of our semolina will be ground in the Marche region. Until further notice, our semolina pasta will be certified 100% Italian, organic and Cappelli wheat.

Organic semolina pasta 100% Tuscan wheat

The pasta is made from organic semolina obtained from selected 100% Tuscan wheat, where the most important feature is not the amount of the gluten content, but its quality.

The wheat is ground by our trusted mills, which never heat the wheat during the milling process in order to maintain unaltered the organoleptic properties of the semolina.

All Fabbri pasta is made and dried at temperatures strictly below 38° centigrade: this ensures that the flavour of the wheat remains intact and gives the pasta an extraordinary capacity to absorb sauces.
